In Latin America and Spain, cocidos are called sancocho, those recipes made in a large pot. All Colombian sancochos are of peasant origin but there is not a single type. There is the sancocho from the Caribbean coast (which is made from fish with coconut milk, yucca and yam), the cundiboyacense, the sancocho valluno is only made of chicken, it has yucca and green banana but not potato.

Ajiaco

The ajiaco is a soup of three types of potatoes that has chicken. In the 20s it was a characteristic soup of the peasantry that was later updated when cream and capers were added. Like the paisa tray, the ajiaco is also the result of a cuisine of miscegenation.

Tamales
