This is how Cuban alfajores are, a real temptation

To end our gastronomic getaway in Cuba we are going to do it but with a dessert, with a sweet that you may not have tried before, but that will still be truly delicious, the Cuban dulce de leche alfajores. For its preparation you will need:

• 1 Sachet of 500g of Betty crocker sugar cookie mix (you can find it in the international food aisle of a large area)
• ½ Cup of walnuts in halves, toasted and finely chopped
• 1/3 cup butter or margarine, melted.
• 1 egg.
• 1 Cup of grated coconut.
• 1 can of dulce de leche.
• 2 tablespoons of icing sugar

We will start by preheating the oven to 180º and we will place waxed paper on the oven tray. On the other hand, in a large and deep container, we will add the Betty Crocker mixture, ½ cup of coconut, the butter, the egg and the walnuts and we will beat it until obtaining a homogeneous dough.

We will spread the dough with the roller on a floured surface until its thickness is reduced to approximately half a centimeter. We will cut the cookies with a wavy corner mold and later we will place them on the waxed paper leaving a centimeter of separation and we will do the same with all the dough.

We will bake between 7 and 9 minutes or until the edges are golden brown, we will leave them on the tray for a minute and then we will transfer them to a rack to cool more quickly. Then we will put a little dulce de leche in one of the cookies and cover it with another, pressing gently. When they are together we will roll the cookie around the rest of the grated coconut and sprinkle them with the icing sugar and they will be ready to eat.
