For its preparation, many ingredients are needed:

  • One or two chickens cut into small pieces
  • 1 liter of chicken broth
  • ½Kg. of rice
  • 2 sweet potatoes
  • 3 tomatoes, 2 carrots, 1 bell pepper, all diced
  • 2 Onions, finely chopped
  • 1 minced garlic
  • 1 Eggplant
  • 1 can of canned corn
  • 1 cup of peanut butter coffee
  • ½ tablespoon ground ginger
  • Peanut or olive oil
  • A little thyme
  • Salt and black pepper

We will begin to steam the potatoes and carrots until they begin to become tender. On the other hand, in a large pot we will fry the chicken in hot oil until golden brown, we will add the salt and pepper and then we will lower the heat, we will add a cup of chicken broth and we will let it simmer.

In a frying pan, fry the tomatoes, onions, garlic and the pepper with very hot oil. We will add the spices, the eggplant and the corn. We leave it a little so that the flavors mix well and we will add the peanut butter and the rest of the chicken broth and we will leave it until everything acquires consistency.

When the sauce is ready, we will add everything to a pot with the chicken and let it simmer for 20 or 30 minutes, stirring frequently and it will be ready to serve.
