Cherna soup, a delicious way to start a meal

We continue with soups and thanks to the condition of the island of Cuba it was unfair not to include some of its good fish such as cherna (grouper) and for this occasion we are going to know how the cherna head soup (grouper) and for this the following ingredients are needed:

  • 2 Heads of cherna
  • 1 Onion
  • 3 large garlic cloves
  • 1 pepper
  • 1 celery stick
  • 2 ripe tomatoes
  • 4 large potatoes
  • ½ Cup of coriander
  • 4 tablespoons sunflower or palm oil
  • 1 tablespoon of extra virgin olive oil
  • Pepper and salt at will

In a saucepan with water, cook the cherna heads until they crumble. Strain this smoke and carefully remove scales, bones and all inedible elements and reserve, on the one hand, the broth and on the other, what is the fish itself.

We will dice the onion, pepper, celery and tomato; on the other hand, the garlic is crushed in a mortar and fried in order. First the pepper and onion, when they are golden, add the celery and garlic, stir the mixture well and finally the tomatoes are added.

When everything is fried, add a little broth, mix well and once everything is well mixed, put the rest of the broth in a saucepan and add the peeled and diced potatoes and the finely chopped cilantro. When the potatoes are soft, add the fish and when it starts to boil, correct the salt point, add the olive oil, stir, cover and it will be ready to serve. If you want, you can add a little rosemary or prawns if you want it to have a more intense flavor.
