Gastronomic visits to Andalusia (II)

If yesterday we presented you with the rich and succulent dishes of 4 Andalusian provinces (Huelva, Córdoba, Cádiz and Seville), today we come to make your palates water with other more typical Andalusian dishes, but this time, from the provinces of Almería, Granada, Jaén and Malaga.

Andalusia

The land of the sun, of good people, of joy, of that characteristic accent that makes us unique, of cultural wonders and long years of history. Here we offer you the second part of this double article about gastronomic visits to Andalusia.

Grenada

Granada, for my taste, the most beautiful and enchanting city in Andalusia, ... Perhaps you know it for hosting one of the most visited historical places, The Alhambra, or maybe because of his Sierra Nevada but what do you know about their typical dishes? Here we name some of them:

  • Pot of San Antón: A typical winter dish where broad beans, beans, rice and blood sausage are mixed. An energetic dish with which we will surely not go hungry.
  • Grenadine soup: And for soup lovers, in Granada you will find this variety made up of fried peppers well cut into small cubes, onions, tomatoes and garlic ... A very special flavor that you can taste alone or with slices of bread.
  • Granada soak: A typical dish left by the Arab culture in its wake ... In its simplest model we can say that it is a mixture of a peeled and well chopped orange and oil. To this, you can add salt or sugar, depending on whether you are more salt or sugar.

Others that we name quickly and without stopping too much are the Alpujarreño dish, the gurupina or the saladilla.

Málaga

To say Malaga is to say anchovies ... This is how the people of Malaga are known, colloquially speaking, and we say that some of the blame will be on rich fried anchovies that can be tasted there. We started strong, but it is not the only delicatessen that they can offer us in the area if we step on it ...

Other typical Malaga dishes are:

  • Stew a la rondeña.
  • Soupy rice with cod (Although Valencians are famous for cooking the best rice dishes with their typical paellas, here in Andalusia you can also try a rich rice soup like this one).
  • Malaga fry.
  • Eggs to the beast. With this characteristic name, the dish that contains eggs, cateto bread, butter, garlic (an ingredient widely used in Malaga cuisine, for example in another typical dish called "ajoblanco"), pork loin, black pudding, chorizo ​​and olives is known .
  • "Bienmesabe", a typical sweet from the Antequera area made by local nuns.

Jaén

Jaén is known as the land of the olive tree and it is the Spanish city that exports the most olive oil abroad. In addition to all the delicious dishes that we can make with this precious yellow gold (by all) from the kitchen, there are other typical dishes that Jaén people can enjoy on a daily basis. We envy you! Some more famous and typical are:

  • Gallians: The perfect typical stew for colder days. It can be made with rabbit, hare or chicken meat and also some Galian cakes are added, which are also typical of Jaén. Formerly they were made by hand but today they can be bought already made in many stores in the area under the name Andalusian rag.
  • Garlic atao ': A sauce whose main ingredient is garlic and that can be used both to accompany other dishes such as meat or to spread in a slice and eat it just like that. Simple, straightforward and cheap.

  • Blancmange: A dessert that takes your breath away ... Also popular in other Spanish regions (we do not know who copied whom ...).

Almería

The easternmost city of Andalusia, first cousin of Murcia (wonderful land also where there are), it is not far behind in this list of foods and succulent dishes to put in your mouth. From there we can name you all these:

  • Soup from Almeria: A coastal city could not do without its typical soup with ingredients from the sea. Fish, clams, prawns and peas ... Only 4 of the ingredients that make up this rich delicacy.

  • Broth I burn ': A kind of stew that can be served together with the typical Andalusian crumbs.
  • Garlic colorao ': Another dish that incorporates a maritime ingredient: stingray, this time. It is a dish that in other Andalusian regions we can try under the name of rin-ran or atascaburras ...
